Two varieties, two very different products
Guntur Sannam (S4) from Andhra Pradesh delivers 35,000–40,000 SHU of heat and is the workhorse of South Asian and Chinese kitchens. Byadgi from northern Karnataka is mild (8,000–15,000 SHU) but rich in capsanthin pigment — making it the global benchmark for natural red food colour and oleoresin extraction.

Guntur S4 typically trades ₹180–₹240/kg FOB Krishnapatnam, while Byadgi Dabbi runs ₹350–₹480/kg FOB Chennai because of its colour value (ASTA 150+). Oleoresin processors in Spain and the US almost exclusively contract Byadgi, KDL and 5531 hybrids.
What to ask your supplier
Always request a recent ASTA colour report, SHU lab test, moisture (<11%), aflatoxin (<10ppb for EU) and a clean pesticide residue panel. Reject lots with stem >1.5% — it cuts colour yield and inflates freight.
